I believe that's the way it's designed to work. If I start a music stream in the Amazon Music App, it plays on my iPhone. I then have to select what Echo devices (including WiiM Amp) I want it to play on by using the cast icon.
Edit to add that I have auto connect enabled.
This has been working great for me for a couple of years now.
I use it on a Paradigm powered sub that the amp smoked, and it has plenty of power. Not sure of the model, but it has one active speaker and two passives in the sub box. 8" I believe.

When I ask Amazon Music Unlimited to play a song via voice to an Echo or the Amazon Music app, the first song won't play on the Amp. It plays on all other devices.
If I use the A.M. app and skip to the next song the Amp will power up and begin to play.

I tried it today and it works with my 20 year old original iPod. WiiM Amp even shows album art for some. There's a bit of a delay from the time I select the song before it begins to play, but I would guess that the Amp is downloading the song before it begins.

That was the factory "demo" version I bought from local Hi-Fi store. I like it because they made it clear to show off the internal workings. I don't really need it much with the Thiels, but it does add a nice feel to the sound.

I believe you can just remove the old device from the speaker group to accomplish what you want. I've moved devices around before and rename them in the beginning of the process. "Echo Old" would be the old one and "Echo New" is the one being swapped in.

Yeah, the WiiM Amp isn't really a receiver (in my mind anyway) that passes through audio/video.
Basically, the WiiM Amp is a replacement for amp and pre-amp separates.
It takes inputs from Streaming, HDMI, Optical, etc. and outputs them to the speakers.
The Amp is audio only, so you can switch to another audio input on the Amp and the TV will continue to play as a TV and your sound will come from whatever source you pick.

When I first received mine in December, I thought it sounded decent, but I described it as vailed, like a sheer curtain in front of the speakers. I'm using large Thiel 3.5 speakers.

Here's something to think about... you mention you have nine Echo devices. If they are all in your MRM group and you're adding the WiiM as number ten, you might have reached to MRM music device limit of nine.
