Yes the fades are nice to have, but you should be able to disable them. Currently this has to be done on the playback device itself. For the raspberry pi headless system, the setting needs to be accessed through the Plexamp web interface for example. Not sure how they'll incorporate those kind...
The implementation will be exactly like the Lumin :)
Also the question remains if you'll be able to use it without a Plexpass subscription/license. Headless playback on a Raspberry Pi for example does require it.

I don't really care about all those gimmicks except maybe for fades if I want to do some background listening with specific playlists. As long as it can play bit-perfect & gapless, I'm happy :)

I've also had to twist the connectors a bit so they would line up nicely on both sides.
I have no experience with Youtube Music, but I suppose that should definitely work yes! And a workaround for audio from Youtube videos would be to cast the audio from your phone or from your current tab in the Chrome webrowser, but not without some horrible transcoding apparently.
Note that gear with 12v trigger ins mostly use optocouplers and additional circuitry to "read" incoming trigger signals to then cycle a relay with some additional power.
So the 12v out of the WiiM might not have enough power to control a mechanical device like a relay.
Yes it's true that the binary info is not going to be sent trough as perfect squares over toslink/coax cables since the actual medium of those cables is of analog nature (light, voltage).
