How do I know I’m using the dac in the people’s and not the Anthem receiver?

If using the pro's line out then is it's analog output, so using the pro's dac.
If using either coax or optical out then it's digital output, so using receiver dac.

Wondering what you typed for autocorrect(?) to get "people's" in the title!

How do I know when I’m using the dac in the pro plus and not the receiver (Anthem mrx300).

I agree with @Mr Ee, but there is one caveat.

Since the AVR's DSP is digitally processed, the AVR's internal DAC is used regardless of whether the WiiM's built-in DAC is used. To avoid this, you must switch to a mode that does not use a DAC in the AVR (for example, direct mode).

example
WiiM > (RCA out) > AVR > (Direct mode) > Speaker out

Would the straight mode (yamaha)be playing with the proplus dac?
Yamaha's straight mode has DSP enabled. Therefore, when analog output from ProPlus, the audio signal through the WiiM's DAC, AVR's ADC and the DAC.

WiiM (D/A) > [RCA out] > AVR (A/D)[Direct mode] (D/A)> Speaker out
